Shrimp Curry Pasta

Spicy, creamy and savory - yum! This easy to make. creamy red curry sauce makes the perfect pairing with shrimp or your favorite low fat protein - land or sea - and can be enjoyed time and time again as a staple lunch or dinner recipe that hits the spot.

Shrimp Curry Pasta

Ingredients

  • 100g frozen medium shrimp
  • 70g non-fat greek yogurt
  • 32g red curry paste
  • 3 garlic cloves
  • 1/4 cup chicken broth
  • 1 bag Skinny Pasta Angel Hair
  • salt and pepper to taste

Directions

  1. Set shrimp out to defrost.
  2. Drain and rinse Skinny Pasta, and add to skillet on medium heat to remove access moisture for 10 minutes, stirring occasionally.
  3. Mince garlic cloves and sauté on non stick pan for 2-3 minutes or until translucent.
  4. Add in 1/4 cup chicken broth to pan with garlic and let reduce over medium low heat.
  5. In a bowl, combine greek yogurt, curry pasta and salt + pepper.
  6. Remove pan with garlic from heat, and add in curry sauce, stirring constantly to prevent grainy texture.
  7. Return to pan on low heat briefly and mix in shrimp + pasta.

Note: I sometimes enjoy tossing the shrimp in paprika, garlic, salt and pepper and then grilling on a cast iron quickly for added spice!
