Cottage Cheese Mac
Cheese lovers unite! If you are craving the cheesy goodness of a hearty bowl of mac n cheese without all the fat and carbs - this ones for you. Indulge in cheesy goodness guilt-free with this tasty cottage cheese mac recipe!
Ingredients
• bag of konjac penne noodles (2 servings per bag)
• 65g lowfat cottage cheese
• 28g fat free mozzarella or cheddar cheese
• 1/4 cup chicken broth
• 1/4 tsp xanthan gum
• 1 tsp paprika
• 1 tbsp garlic powder
• salt + pepper to taste
Directions
1. Drain ans rinse Konjac pasta, and place in saucepan on low medium heat, stirring occasionally. For best results leave on heat for 10+ minutes.
2. In a blender, combine all you other ingredients and blend until even texture.
3. Remove the pan with the pasta from heat and pour sauce into pan making sure to stir the sauce.
4. Return pan to low heat and continue stirring sauce until desired temperature and consistency is reached.
5. * optional* sprinkle 5g dried parmesan on top!
