Blueberry Glazed Sweet Bread

A sweet treat with a big punch of protein! I come back to this recipe time and time again to satisfy my sweet tooth. Fluffy, moist and choc full of blueberries - you wont want to stop creating this one!

Blueberry Glazed Sweet Bread

Ingredients

• 1.4 cup egg white powder (not protein powder)

• 1/2 cup water

• 1/2 cup glazed donut 0 calorie syrup (or liquid sweetener of choice, just make sure to dilute if using maple syrup/honey/etc)

• 1/2 tsp xanthan gum

• 1/2 tsp baking powder

• 1/2 cup non-fat greek yogurt

• 45g blueberries

• 2 cups 0 calorie powdered sugar substitute

• 3 tbsp water

• optional * I did 1 tbsp lemon juice and 2 water to give the glaze a little citrusy kick!

Directions

1. In a bowl, combine dry ingredients except for powdered sugar. Then add in water and liquid sweetner and use electric hand whisk to whip the ingredients together

2. Gently fold in greek yogurt and blueberries, being careful not to over mix/mix aggressively.

3. Add doughy to bread pan and set in oven for 30 minutes at 350 degrees.

4. Once bread is baked, remove from oven and let rest for 2-3 hours.

5. Once the loaf has cooled, you can whisk together powdered sweetener and water, and glaze loaf as desired.
